Los Patios is a coffee from the French roaster Tanat Coffee, which immediately captivates with its tropical expressiveness. The flavor features juicy peach, sweet pineapple, and delicate papaya. Together, they create a profile that resembles a sun-drenched fruit cocktail. The body is full and smooth, allowing the individual notes to develop beautifully and leave a pleasantly long impression.
This lot is made from the Castillo variety on farms located at an altitude of 1,600 to 1,900 meters. Its next journey takes it to the Los Patios fermentation station in La Plata in the Huila region. Los Patios is not a classic station, but a modern research and innovation center that connects small producers, new processes, and precise quality control. Laboratory analyses, controlled fermentation experiments, and long-term cooperation with farmers are used here. This gives growers access to technologies they could not afford on their own and allows them to participate in the creation of lots with unique flavor profiles. The station also functions as an educational center where the local community learns advanced techniques and gains greater stability in the specialty coffee market.
After an initial 12-hour aerobic fermentation at the producers' premises, the de-pitted cherries are sent to Los Patios. Here, natural peach concentrate and a special solution are added to enable controlled 48-hour fermentation. Drying takes place slowly over twelve to sixteen days, and regular turning ensures uniformity and a clean final character. The result is a bold, playful, and distinctive coffee with a filter roast and a score of 88.
