Colombia LICHIUM - CO-FERMENTED LYCHEE from Spanish roaster Brewing Dealers is a coffee with a distinctive fruity profile dominated by lychee and tropical fruit notes. The coffee has a fresh and clean character that will captivate you with its exotic fruity sweetness and delicate floral undertones. This profile is ideal for filter brewing, where the flavor fully develops and offers a complex yet balanced experience. Lychee brings a unique sweetness and exotic freshness that gives the coffee a distinctive yet harmonious flavor.

The coffee comes from the Finca Chambaku farm in the Caldas region and is grown at an altitude of 1,750 meters above sea level. This lot is produced by Juan Felipe Restrepo under the Coffeelipe brand, which focuses on innovative fermentation methods that give the coffees original flavor profiles. In 2017, he began collaborating with the Santuario Project, an initiative that helps farmers improve the quality of their coffee cultivation and processing. This project is key to ensuring high-quality production and sustainable cultivation, resulting in coffees with a distinctive character and complex flavors that are attracting the attention of specialty coffee lovers.

This coffee is processed using the Thermal Shock Lychee co-fermentation method, in which the cherries are fermented in closed containers for 48 hours with an addition of lychee. This process gives the coffee its characteristic tropical flavor, complemented by fresh and fruity notes. After fermentation, the coffee is dried in mechanical silos for 3 days, giving it a unique purity and intensity of flavor. A cupping score of 86 indicates that the coffee is of excellent quality, with a clean profile and highly desirable fruity and floral notes, making it ideal for filter brewing.
