Behind this lot is producer Jaime, who, together with his son, has been farming for more than ten years on a farm covering approximately three hectares in the La Bella area of the Huila department. At an altitude of around 1,560–1,700 meters above sea level, they grow Caturra, Pink Bourbon, and Gesha varieties, relying on a combination of traditional work and a sensitive approach to quality. The smaller size of the farm allows them to keep track of every step—from hand-picking ripe cherries to final drying. The result is coffee that reflects both the character of Huila and the signature style of the family farm.
Processing is done using the washed method with extended fermentation, which promotes purity while adding depth of sweetness. Fully ripe cherries are first hand-picked, hulled, and then undergo a longer fermentation in water before being carefully washed. This is followed by drying, during which the beans are regularly turned to maintain stable moisture content and a clean sensory profile. Thanks to this process, the cup beautifully highlights citrus notes of orange peel, delicate caramel, and almond tones, making Colombia Jaime a reliable, easy-going filter coffee for every day.
