Colombia Inmaculada Geisha from the Romanian roaster Guido Coffee is a coffee that stands out primarily for its smoothness, purity, and distinctive aroma. Guido includes it in its Vision line, which features rarer and more distinctive lots. The beans come from Colombia, specifically the Pichindé region in Valle del Cauca, where the Holguín family’s Inmaculada farm is located. The coffee trees here grow at an elevation of around 2,000 meters above sea level, and this lot consists of the sought-after Geisha variety. It is prized primarily for its delicate floral notes, lightness, and distinctive aroma. Combined with the farm’s high elevation, this results in a very clean and layered cup, where floral notes easily come through alongside fruity ones.
The coffee is processed using the washed method, which allows the bean’s natural character to shine through and is typically associated with a cleaner and more distinct flavor profile. With this processing method, after harvesting , the skin and most of the pulp are removed from the cherries , and the beans then undergo fermentation, washing, and drying. As a result, the Geisha can showcase its typical elegance without pronounced fermented notes, leaving plenty of room in the cup for lavender, the freshness of white peach, and the delicate sweetness of linden honey.
