The green beans come from the renowned Jinotega region in Nicaragua. They were grown on the Los Placeres farm, which is successfully managed by the respected Mierisch family. Their tradition of growing top-quality specialty coffee dates back to 1908. The plantations are located at an elevation of 1,250 to 1,400 meters, where Red Catuaí coffee trees draw nutrients from exceptionally rich soil. The family places great emphasis on protecting the surrounding environment and actively supports local biodiversity. Thanks to this gentle and considerate approach to nature, the result is a raw material of the absolute highest quality.
After harvesting the ripest cherries, the classic washed processing method was applied. Workers first removed the outer skin from the cherries and then transferred them to water fermentation tanks. Here, a carefully controlled fermentation took place, allowing the beans to be safely separated from the remaining sweet pulp. This was followed by a thorough rinse with clean water and slow drying. This traditional process guarantees the purity of the final beverage. As a result, there are absolutely no distracting elements in the flavor, only clearly defined and highly stable notes.
