The Parisian roastery People Possession is known for its passion for exceptional and experimental coffees that push the boundaries of the ordinary taste experience. El Paraiso Maragogipe is a perfect example of this. The very first aroma suggests that something extraordinary awaits you – a fresh and slightly spicy note of ginger unfolds in the cup, complemented by the citrus elegance of lemongrass. Gradually, the flavor softens into light notes of peach tea, and the whole profile closes with the creamy sweetness of milk chocolate.

The coffee comes from the Valle del Cauca region of Colombia, from the renowned El Paraiso farm, which is located at an altitude of approximately 1,880 meters. It is produced by the Bermúdez family, one of the most progressive producers in Colombia. The farm is known for its technological and experimental approach to coffee processing, using controlled fermentation, precise temperature procedures, and microbiological processes to help create unique flavor profiles. Thanks to the high altitude, the cherries ripen more slowly, which promotes the development of complex flavors.

The variety is Maragogipe, also nicknamed "elephant coffee" due to its exceptionally large beans. It is a natural mutation of the Typica variety, which is prized for its delicacy, elegance, and ability to convey the character of the processing very well. In this case, the coffee was processed experimentally using koji fermentation in combination with the thermal shock method. During fermentation, koji microorganisms are used to help break down the sugars in the pulp and create unique flavors. The subsequent thermal shock stabilizes the fermentation and helps to "lock" the resulting flavors inside the bean. The result is an exceptionally aromatic and clean coffee with a distinctive but harmonious flavor profile.
