This new product from London roaster Square Mile is exactly the kind of filter coffee you want to drink from morning to afternoon: fresh, juicy, and beautifully clean. El Filo comes from Colombiaand offers blackcurrant, ripe pear, and a silky texture that holds a sweet aftertaste until the last drop. It is roasted for filter coffee, so it works great in a V60, Kalita, batch, or Aeropress—simply a modern, easy-drinking Colombian coffee that delights with its fruitiness without excessive acidity. And yes, this is El Filo's debut in Square Mile's filter lineup, which in itself promises a delightful experience.
Behind the coffee is producer Francisco Loaiza, a second-generation grower in the micro-location of Alto de Naranjal. His farm sits at an altitude of around 2,050 meters above sea level and has approximately 6,000 coffee trees. Unlike many other parts of Colombia, the harvest season here is characterized by a very dry, low-humidity climate, which contributes to the purity and stability of the final profile. The varieties are a combination of Caturra, Castillo, and Colombia —classics for Nariño, which produce dense, fruity beans with a distinctive sweetness. Square Mile works on this lot with the exporter Fusión Coffee, which buys directly from producers and uses a bonus program to motivate quality and long-term investment in farms. The result? A refined cup that combines local terroir with careful work in the field and during purchasing.
The processing is washed, but with clearly defined steps that shape the character of the cup: after being hand-picked, the cherries are first sorted in water (floating), then fermented for 1 day in the whole fruit, followed by hulling and another 2 days of fermentation in the parchment. Finally, the coffee is sun-dried on a patio to stabilize the moisture content and keep the profile clean, juicy, and silky. This process highlights the combination of currant tones, pear juiciness, and smooth body—exactly what makes El Filo such an addictive filter coffee.
