It captivates with its full body and distinctive sweetness, reminiscent of mandarin compote and fruit jelly coated in chocolate. The flavor profile is so pleasant and sweet that a cup of this coffee is almost like a little gift from Santa Claus.
Behind this coffee are Colombian farmers Edinson Argote and Ángela Rojas, who together founded the Quebraditas project focused on the production of specialty coffee. Edinson and Ángela specialize in growing coffees with unique and repeatable flavor profiles, which they achieve through the use of sophisticated fermentation processes, including thermal shock and yeast inoculation. In addition to bean processing, they also emphasize agromanagement and soil care, which is positively reflected in the quality of their production.
This coffee is processed using the dry method with double fermentation and yeast. After harvesting, the coffee cherries are soaked, during which all unripe or overripe fruits are carefully removed. This is followed by a double fermentation process – the first phase lasts approximately 60 hours, after which the coffee is dried for about twelve days until it reaches 20% moisture content. The coffee is then rehydrated with juice from the previous fermentation (called mosto) and fermented for four days using yeast. After the second fermentation is complete, the coffee is dried for 76 hours until it reaches the ideal consistency and flavor profile.
