The coffee comes from the Ambera farm in the Pitalito area of Colombia’s Huila region, which is one of the country’s most important centers for modern specialty coffee. Pink Bourbon coffee trees grow here at an elevation of 1,400 to 1,700 meters above sea level among the Andean mountains, where the cooler climate and volcanic soils promote slower ripening of the cherries and the development of complex flavor profiles. Pitalito is known primarily for its producers, who combine precise harvesting with innovative processing methods, resulting in coffees with high sweetness, pronounced fruitiness, and a clean profile. This lot achieved a score of 85.75 points.
Processing is carried out using the co-fermented washed blueberry method. After selective harvesting, the cherries undergo controlled fermentation using blueberry components to enhance the coffee’s fruity character. The coffee is then washed and dried to preserve the clarity and distinctiveness of the final cup. This combination of modern fermentation and washed processing results in a coffee with pronounced notes of blueberries and blackberries, juicy fruity acidity, and a refreshing character reminiscent of fruit lemonade.
