Behind this profile stands theYunlan Estate in the Menghai area of the Xishuangbanna region, where Hongjun Zhang has been building one of the most progressive coffee farms in China since 1999. The farm lies at an elevation between 1,600 and 1,800 meters and is surrounded by lush nature, creating ideal conditions for growing specialty coffee. With more than 20 cultivated varieties, an emphasis on a scientific approach, and respect for traditional methods, the farm produces coffees with a unique character. ThePurple Typica variety, which makes up this lot, is one of the farm’s most fascinating gems and demonstrates just how far the flavor of coffee can evolve. After a devastating fire in 2014, Mr. Hongjun Zhang, now in his 80s, rebuilt the farm and continues to work there today with incredible energy and determination.
Processing is done using the natural method, which allows the bean’s natural sweetness and complexity to shine through. After careful harvesting, the whole cherries are sun-dried, where they gradually transfer their sugars and aromatic compounds into the coffee bean. This process promotes a fuller body, more pronounced fruitiness, and subtly fermented notes that add depth to the coffee.
