The Aguiar family is synonymous with coffee tradition – they have been growing coffee for nine generations, and their story began in 1860. Fazenda Semente, which is now their home, was established in 1970, but the coffee trees were not planted until 18 years later. Since then, their work has focused exclusively on quality and careful selection of beans. Today, coffee trees grow on 225 hectares, providing the raw material for select coffees recognized around the world. This particular batch comes from plants planted in 2014, which means they have reached optimal maturity and provide rich and balanced fruits.
The processing of this coffee is as exceptional as its origin. After harvesting, the beans undergo 87 hours of anaerobic fermentation, during which they are stored in an oxygen-free environment. This method promotes the development of more pronounced fruity and sweet tones and gives the coffee a velvety texture. This is followed by careful drying – first for 12 hours in the sun to enhance the natural sweetness , then for another 36 hours by machine, which ensures even drying and preserves quality. The result is a coffee that will delight you when prepared as an espresso, but will not lose its charm in an aeropress or moka pot.
