Hungarian roaster Hi New Beans presents a coffee that is distinctive yet easy to drink. With this anaerobic Brazilian coffee, they aim to leave you with an unforgettable experience. The coffee has distinctive and juicy notes of dried berries, a hint of Kahlúa rum and coffee liqueur, and a spark of sparkling wine acidity. Thanks to its darker roast, it is best enjoyed as an espresso, but the roastery did not hesitate to experiment and also tried it as a cold brew.
The Campo das Vertentes region lies in the heart of Brazil's Minas Gerais, where mountainous terrain meets two river basins, creating a unique microclimate and fertile soil. The region has been known since the 19th century for its excellent Arabica coffees. The rich history and natural conditions give Campo das Vertentes coffees their typical profile, protected by a geographical indication of origin that guarantees quality. The cherries come from theFazenda Santo Antônio farm, which was founded byJoão and his wife Neneia in 2002, continuing the family tradition of coffee cultivation.
The coffee is processed using the anaerobic dry method (anaerobic natural). The coffee cherries are hand-picked and carefully sorted. They are then left in special tanks without oxygen for up to three days. These conditions influence the fermentation process and allow more distinctive tones to emerge. After fermentation, the cherries are spread out on African beds or concrete surfaces, where they are left to dry evenly while being continuously turned. After resting in silos, they are taken over by a roaster, who conjures up beans from them, which you can then use to conjure up a distinctive and unique cup of coffee at home.
