And now for the best part: these beans were once again shipped to us by sailboat, so in addition to great taste, you also get the good feeling of a slower, more considerate journey across the ocean. The coffee is pleasantly round and accessible, working beautifully as an espresso on its own, but also in a cappuccino, where the caramel and hazelnut combine to create a velvety, dessert-like experience. It's a safe bet for your grinder, perfect for when you want a modern Brazilian coffee with classic comfort and effortless elegance.

Behind this lot is the Croce family from the Ambiental Fortaleza (FAF) farm, which for five generations has given Mogiana the face of responsible and thoughtful agriculture. FAF is not just a farm—it is an ecosystem: the Bob-o-Link project brings together about fifty partner producers and builds on reforestation, mixed farming, and education. It is named after the bobolink, a migratory American bird whose migration route symbolically connects north and south, just like coffee traveling from Brazil to us. The philosophy is clear – to grow high-quality coffee, promoting biodiversity and respecting people and the landscape. At altitudes of 1,200–1,400 meters above sea level, Red Bourbon trees grow on agroforestry land, where the shade of native trees stabilizes the microclimate, slows down the ripening of cherries, and brings natural sweetness to the cup. The result is flavor stability across harvests and the Mogiana signature that you will recognize blind: calm, caramel, chocolate notes, and a clean nutty finish.

The processing is natural. Fully ripe cherries are sorted after being hand-picked, remain whole, and are slowly dried on raised beds or patios so that the pulp can transfer maximum sugars and fruit esters to the beans during drying. Regular turning and airflow control keep fermentation within a safe range and help to "preserve" the purity of the profile.
