This coffee is the result of the Zanya Coffee project, which has been run for more than seven years by Marián Takač from Slovakia and Jan Lim, a farmer from the K'Ho ethnic group. Together, under Mount Langbiang in Lạc Dương, Đà Lạt, they bring together families and small growers with the aim of showing the world that Vietnamese coffee can be synonymous with top quality. Zanya Coffee is not just about coffee, but also about people, fair conditions, strengthening the community, and preserving the cultural identity of the K'Ho. The combination of traditional knowledge and modern practices has created a product that reflects the terroir of the Đà Lạt highlands and the determination of the local people to build a sustainable future.
This coffee is processed using the double washed method, also known as double fermentation, which is particularly popular in East Africa. After removing the pulp, the beans ferment in water for approximately 36 hours, then they are thoroughly washed and soaked in fresh water for another 24 hours. This step gives the coffee its characteristic purity and clear flavor profile. Subsequent drying in the sun and in drying houses, which takes up to two weeks, completes the process and gives the coffee its elegant, sparkling, and balanced profile. Thanks to this precise method, the fruitiness, floral tones, and subtle chocolate aftertaste fully develop in the cup, making this coffee a real experience.
