We are delighted to introduce a warm festive novelty, Uganda Namugova coffee from BirdSong Coffee. From the very first sniff, this coffee will draw you into a world of sweet cherry liqueur and chocolate. In the resulting cup, which is primarily intended for filtered preparation (V60, Chemex, Aeropress), the dominant tones are complemented by the subtle spiciness of fermented pepper, which adds depth, warmth, and spicy elegance to the coffee. With a cupping score of 86 points, Namugova is excellent proof of how Uganda has broken free from its reputation as a commodity coffee producer and become a source of top-quality, experimentally processed lots.
Namugova comes from the Mount Elgon region in eastern Uganda, where small farmers grow the Nyasaland, SL14, and SL28 varieties. The production is handled by The Coffee Gardens washing station, with which BirdSong maintains a close and transparent partnership. The aim of this partnership is to grow specialty coffee in an ethical manner, ensuring sustainability and environmentally friendly practices, which also includes farm reforestation projects. The Uganda Namugova micro-lot is not only a taste experience but also an ethical one, ideal for moments of relaxation and contemplation. The roasting at BirdSong Coffee is designed to maximize the sweetness and distinctive tones of fermented fruit without suppressing the delicate acidity and spicy elements.
The key to the unique and complex character of this coffee is its demanding and precise processing, known as cherry fermentation. The entire process involves an incredible 140 hours of fermentation. First, the coffee cherries are dry fermented for 100 hours in tanks, a phase during which the fruity and sweet profile develops intensively. The coffee is then hulled and undergoes another 40 hours of fermentation in cold spring water, which further refines and purifies the flavor. The coffee is then carefully dried on African beds and undergoes several stages of sorting before export. The entire process is personally supervised by Job Namugowa, the head of the washing station, after whom the coffee is named.
