Don’t miss this well-balanced Rwandan Gitoki Red Bourbon from Foundation Roasters, which captivates with its purity and smoothness. In your cup, a fresh citrus note of juicy orange unfolds, complemented by light floral tones—perfect for the first days of spring. Notes of black tea and ripe apples then ensure a very harmonious and juicy flavor profile. Thanks to cultivation at an altitude of 1,500–1,800 meters above sea level, the coffee retains a pleasant acidity and a clear flavor profile. The result is a fresh, elegantcup that feels light yet very complex—ideal for moments when you crave a coffee that is lively, aromatic, and beautifully balanced.

The coffee comes from the Gitoki Hill area in Rwanda’s Eastern Province, home to the Gitoki Hill washing station. The station works with approximately 1, 120 smallholder farmers who bring their coffee cherries here during harvest. In a region where coffee cultivation is a vital part of local communities’ livelihoods, the station plays a key role by enabling farmers to process their harvest in one place, thereby maintaining both quality and production stability. Each year, approximately 10 containers of green coffee are produced here, which are then shipped to roasters around the world.

After harvest, the coffee cherries are brought to the Gitoki washing station, where they undergo washed processing. First, the pulp is removed, and then the beans ferment in water tanks to release the remaining mucilage layer. After fermentation, the coffee is thoroughly washed with clean water and then spread out on raised African beds, where it slowly dries in the sun for several days. During drying, the beans are turned regularly to ensure even drying and preserve their quality. This process helps highlight the characteristic clarity of Rwandan coffees while emphasizing their fresh citrus acidity and delicate floral aroma.
