The Liberec roastery Jedno Kafe brings you a juicy, tropical, yet elegant Rwanda that beautifully combines distinctive fruitiness with chocolate depth. Birembo 283 is clean and clear, but at the same time offers enough layers to keep you entertained from the first sip to the last. The flavor features mango, peach, and lychee, complemented by a subtle hint of licorice and a sweet finish reminiscent of chocolate fondant. The body is medium, the texture smooth, and the aftertaste long, sweetly fruity, with a pleasantly elegant finish.
The coffee comes from the Birembo washing station in the Macuba sector of Rwanda's western province, not far from Lake Kivu. The station was established in 2013 and today works with more than 500 small farmers who bring cherries from the surrounding mountains. They mainly grow the Red Bourbon variety at high altitudes, which in this area reach up to 2,000 meters,where the cooler climate allows the cherries to ripen more slowly, giving them time to develop more natural sweetness and a more pronounced aroma, which then comes through beautifully in the cup.
Processing is done using the classic washed method. Careful sorting is followed by fermentation lasting approximately 12 to 15 hours, which helps to enhance the purity and clear flavor profile. This is followed by slow drying on African beds, during which the coffee is regularly checked and turned to ensure even drying. The result is a refined washed lot from the Nyamasheke region with an exceptionally clean profile, clear structure, and tropical character typical of western Rwanda: sweet, juicy, elegant, and pleasantly complex.
