This lot stands out for its renowned floral elegance, a characteristic of the Gesha variety used here, which is why Sey Coffee decided to explore the Santa Teresa region more deeply. In the cup, a very clean, almost ethereal profile unfolds. The main aromatic component is the intoxicating scent of jasmine, which seamlessly gives way to the delicate sweetness of white peaches on the palate. The overall profile is then refreshed and brightened by clear notes of yellow tropical fruit. It is a highly sophisticated, harmonious, and complex filter coffee that combines the lightness of a tea-like texture with a rich fruit spectrum.

The coffee comes from the young El Paraiso farm, established as recently as 2021, located in the Cusco region (Pampa Rosario area) at an extreme altitude of 2,050 meters. Farmer Luis Salas dedicates his small 1.5-hectare plot exclusively to growing the Gesha variety, adhering strictly to organic farming practices. The original beans were imported directly from Panama, the cradle of this variety’s modern fame. The trees are now five years old and are in their third year of bearing fruit, a stage at which the quality of the crop reaches its absolute peak. This is a rare opportunity to taste 100% pure Gesha grown in the harsh and unique conditions of the high Peruvian Andes.

The perfect clarity of the flavor notes is due to a precisely executed washed processing method. Hand-picking takes place at the moment of absolute ripeness of the cherries from the November 2025 harvest. After sorting in water baths (floating), the cherries are hulled on the day of harvest and then undergo a 36-hour dry fermentation. This process helps stabilize the complex acids and highlight the variety’s natural floral character. Subsequent drying on raised beds lasts a full 20 days, ensuring optimal moisture loss and long-term bean stability. The producer’s meticulous approach and sensitive roasting profile result in a technically flawless product that embodies transparency and the highest standards of the premium segment.
