Peru La Chirimoyafrom Candycane Roasters is a real gem among this year's filter coffees and one of the most exclusive coffees you can taste right now. It is an organically grown microlot of the Geisha variety from the 2025 harvest, processed using the washed method, which is available only in limited quantities – once sold out, it will not return. In the cup, it offers exactly what you would expect from a top-quality Geisha: elegance, purity, and distinctive floral notes. The aroma is dominated by jasmine and lemongrass, while the flavor gradually opens up with notes of peach, apricot jam, and elderflower honey. The silky body with the smoothness of cocoa butter is beautifully complemented by juicy mandarin acidity and a long, sweet aftertaste that lingers on the palate long after you finish drinking.

The farm is located in the San Ignacio region, which is known for its high altitudes, clean mountain climate, and fertile soils—it is these conditions that give coffees from this part of Peru their delicate structure and complex aromatics. Production is small-scale, with an emphasis on detail at every step – from caring for the coffee trees to carefully selecting perfectly ripe cherries at harvest time. Victoria Ramos focuses on quality rather than quantity, which is essential for microlots. As a result, her farm can offer an exceptionally clean and consistent profile that fully demonstrates the potential of the Geisha variety in the Peruvian terroir.

The coffee is processed using the washed method, which is key to achieving maximum purity and transparency of flavors. After being hand-picked, the cherries are pulped, fermented, and thoroughly washed to remove any remaining mucilage. The coffee is then dried under controlled conditions, which helps stabilize its flavor profile and highlight its natural floral notes and juicy acidity. The result is a precise, clearly structured cup that showcases Geisha in its purest form.

Not a trace of the apricots
I tried different grind sizes, but I couldn't get anything good out of it

From a blind sample, I would never have guessed that it could be Geisha.
The grains are strangely cracked, odorless, do not appear fresh, and have a bland to boring taste.
