Behind this extraordinary lot is producer Karin Dietrich and her family farm, located in the Los Pozos area of Panama's Chiriquí region. The coffee trees here grow at an altitude of 1,900 meters above sea level, where they thrive in rich volcanic soil, under cool mists called bajareque and with regular rainfall. Thanks to these ideal conditions, the coffee cherries ripen more slowly, allowing them to fully develop their flavor profile. The result is a coffee with a distinctly fruity and complex character that is unforgettable. It is no wonder that Panama is one of the most respected producers of specialty coffee in the world.
This coffee has been processed using the dry method (natural), which perfectly highlights the natural flavor and aroma of each bean. After harvesting, the coffee cherries undergo careful sorting so that only the highest quality ones are selected for further processing. The whole cherries are then dried – either on raised African beds or on concrete surfaces. During this strictly controlled process, the pulp remains intact, allowing sugars and aromatic compounds to slowly penetrate the coffee bean. It is thanks to this traditional processing method that the coffee acquires its characteristic sweetness and distinctive fruity notes.
