It comes from the Huehuetepan farm, located in the Cosautlán de Carvajal area in the Veracruz region of Mexico. The farm belongs to Carlos Cadeno, who represents the fifth generation of coffee growers in his family. The coffee is of the Mundo Maya variety, which is known for its resistance and quality. The coffee trees grow at altitudes of 1,600 to 2,000 meters above sea level. Carlos only became involved in the coffee business after completing his bachelor's degree, when he returned to the farm. After 2012, he began experimenting with processing and varieties, which led to his victory in the Taza Excelencia Mexico competition. This experience contributed to the further development of the farm and high-quality production.
The coffee is processed using the fermented washed method, which means that the coffee cherries undergo controlled fermentation, then are peeled and washed. This process preserves the purity and structure of the flavor, giving the coffee a delicate sweetness and interesting fruity notes. The coffee is dried in the sun and on African beds, which ensures even drying and flavor stability.
