This coffee from the Polish roaster Hayb is a real treat for lovers of select coffee. Its unique flavor profile combines fresh notes of mint, eucalyptus, and crème pâtissière, creating a refreshing yet delicately sweet cup. Thanks to its light roast, it is ideal for filter brewing, where its complexity and purity of flavor really shine through. This coffee is the result of an innovative approach by the Aquiares farm, which uses by-products from the production of eucalyptus essential oils to ferment coffee cherries, creating a unique and unforgettable taste experience.

The Aquiares farm, located in the Turrialba region of Costa Rica, is the largest contiguous coffee plantation in the country and is known for its emphasis on sustainability and innovation. It is owned by the Robelo family, specifically Diego Robelo, who runs the farm with a vision of combining traditional coffee cultivation with modern technologies and ecological practices. The farm is located at an altitude of 1,200 meters above sea level and grows the Centroamericano variety, which is known for its resilience and flavor. In addition to coffee, the farm also grows other crops such as cocoa, bananas, and oranges, and produces essential oils, demonstrating its diversity and innovative approach.

The processing of this coffee is truly unique. After harvesting the ripe coffee cherries, they are fermented in water that has been used to extract essential oils from eucalyptus leaves. This method, known as co-fermentation, gives the coffee distinctive herbal and citrus notes. After fermentation, the coffee is dried in the sun and then mechanically dried, which ensures its stability and preserves its flavor characteristics. The result is a coffee with bright acidity, medium body, and a complex flavor profile that will appeal to every lover of specialty coffee.
