A juicy coffee from Kenya that combines sweetness with a delicate fruity freshness. The washed processing and roasting by Unity Coffee Roasters bring out notes of caramel, orange, and lychee, which naturally complement each other in the cup and gradually unfold. The flavor is clean and smooth, with a pleasant sweetness and a light citrus sparkle that adds liveliness to the coffee. Overall, the coffee is harmonious and very easy to drink.
Matunda coffee is produced by a cooperative of small-scale farmers, established in 2009 with the support of the Kenyan government in response to the need to strengthen farmers’ position throughout the coffee supply chain. The main idea was to give growers greater control over their own production and sales so that they would not be solely dependent on buyers and could better manage the terms under which they sell their coffee. Thanks to this, they have the opportunity to achieve higher and fairer returns, which they can reinvest in improving the quality and operations of their farms. At the same time, the cooperative provides its members with support in areas critical to long-term development, ranging from sharing know-how and modern farming practices to better access to coffee processing and sales in more demanding markets. Efforts to increase the overall value of the coffee also play a significant role, whether through an emphasis on quality, transparency, or building more direct relationships with buyers. As a result, this project becomes not only a source of high-quality coffee but also an example of how farmers’ cooperation and organization can contribute to a more sustainable and equitable functioning of the entire industry.
In the washed method, the cherries first pass through a pulper, which removes both the skin and the pulp. The remaining green beans, with traces of pulp still attached, are then fermented for several hours to make it easier to separate the remaining pulp. After fermentation, the beans are washed with water to remove residual sugar. The coffee is then sun-dried on concrete surfaces or raised beds. In some cases, mechanical dryers are used if outdoor conditions are unsuitable. The resulting coffee processed using this method has a cleaner flavor, higher acidity, and distinct fruity notes.
