Process: for high clarity
Sift the Coffee and remove only fines and Chaff(this made a big difference)
Closed valve
50g 45 sec Bloom
Pour to 150
Open valve at 1:15 at let almost all water out
Fill up to 250g
Should be finished at around 2:30
I like to add 2 Icecubes (15g each) before the brew

The flavor profile is spot on; once I fine-tuned the recipe, the cup has the tartness of rhubarb and the bitterness of black currants
I was expecting a lighter roast—it took me a while to get the brewing right (mainly by using a lower temperature to avoid bitterness)

A nicely balanced cup of coffee.
To be honest, I didn't detect any fruity notes in it; it was fresh, but I didn't smell any fruit. I've tried several recipes, but I guess I haven't quite gotten the hang of washed coffees yet—they seem a bit bland to me...
