The beans come from Honduras, from the La Paz region, specifically from the Las Moras farm. The lot is tended by Heber Hernán Ávila, a representative of the third generation of coffee growers. The farm itself is named after the blackberries that grow in the surrounding area – and honestly, that suits this coffee quite well, because it has a pleasant fruity character. The plantation covers approximately 4.2 hectares and is located high in the mountains, around 1600–1800 m above sea level.
The coffee is processed using the honey method. This processing method got its name because it brings out the honey-like sweetness of the beans that are processed in this way. The cherries pass through a depulper and the beans with the pulp residue go straight to dry in the sun for 9–12 days. Each drying bed has its own "guardian" who regularly rakes the coffee to ensure it dries evenly – and it is precisely this detail that you will then recognize in the sweetness and purity of the cup.
