This limited edition Honduran coffee from BirdSong Coffee is our winter recommendation for anyone who loves sweet filter coffee but doesn't want to compromise on flavor. The cup combines notes of fermented cocoa beans, juicy blackberries, and delicate caramel, complemented by a pleasant, rather subtle acidity. If you are looking for a coffee that tastes like a liquid dessert while retaining the elegance of a modern specialty coffee, this lot will be your winter staple. Reach for it whenever you want to brighten up dark evenings with something truly sweet, fragrant, and exceptional—whether for yourself or as a gift under the tree.

Beans from the mountainous region of La Paz in Honduras, grown at an altitude of around 1,850 meters above sea level, produce a clean, juicy cup that stands out beautifully in pour-over, batch brew, and other filtered preparations. The Fabia Caballero Jr. family has been growing coffee for five generations, and the La Selvaje farm, which he bought with his grandfather in 2019, continues this tradition. La Selvaje is located in the Santa Ana area of the La Paz region, and its name – "the wild one" – accurately describes the local environment. Up to 90% of the coffee trees here grow in the shade of lush vegetation, among springs and diverse fauna and flora. From the beginning, they have mainly planted Java and Gesha varieties, which were later joined by this exceptional Catuai. In 2025, the farm succeeded in the Cup of Excellence competition, winning in the Exotic Variety category.

The Supernatural method combines controlled anaerobic fermentation with dry (natural) processing, which gives the coffee an intense and complex flavor profile. This method is characterized by emphasizing the fruitiness and sweetness of the beans at the processing stage while preserving the natural character of the coffee from a specific farm and the local conditions in which the coffee grows.

I have a soft spot for this roastery and always manage to conjure up a great filter coffee from it. This Christmas limited edition was no exception.
