The coffee comes from the hilly region of Copán, in western Honduras near the border with Guatemala. Coffee cultivation has a tradition dating back more than a century in this area. At an altitude of between1,000 and 1,600 meters above sea level, the coffee cherries develop slowly, which contributes to their rich flavor spectrum. The volcanic soil is rich in minerals, which influence the flavor of the final bean and give the coffee its characteristic fullness and smoothness. The region is known for its small family farms, where farming is done with respect for nature and tradition.
This coffee was processed using the washed method, which ensures the purity and balance of the final cup. After harvesting, the skins were removed from the cherries, followed by fermentation and thorough washing in water channels. The coffee was then dried in the sun until it reached the ideal moisture content.
