The Khalida Shify farm, inherited from his father and grandfather, is located in the Jimma area in the southwest of Ethiopia. At an altitude of 2100 meters, daytime temperatures are mild, and nights are cool. This leads to the slow ripening of coffee cherries and their high quality. The farm used to be a forest, but the trees were cut down for fuel and building materials. Khalid greatly appreciates the environment from which he comes, and this is reflected in his relationship with the land and coffee cultivation. He is working on partial forest restoration and is replanting various species of native trees among the coffee plants. These will provide shade for the coffee trees, enrich the soil with humus, prevent erosion, retain moisture, and provide a home for small animals. No pesticides, herbicides, or chemical fertilizers are used here. Weeds are removed manually. Khalid believes that preserving the natural ecosystem reduces the risk of pests and diseases.
In the washed method, the cherries first pass through a pulper that removes both the skin and the pulp. The remaining green beans with traces of pulp are then fermented for several hours to more easily separate the remaining pulp. After fermentation, the beans are washed with water to remove any leftover sugar. The coffee is then sun-dried on concrete patios or raised beds. In some cases, mechanical dryers are used if the outdoor conditions are unsuitable. The resulting coffee processed by this method has a cleaner taste, higher acidity, and pronounced fruity notes.
