Mustefa Abakena's farm is located in the picturesque Jimma region in western Ethiopia, at an altitude of 2,040 meters above sea level. Mustefa works with several small farmers, from whom he buys freshly harvested cherries. He invests in training, modern equipment, and ecological approaches, thereby strengthening the local community and protecting Ethiopia's coffee heritage. He combines traditional methods with innovation, which allows him to deliver the highest quality coffee.
Part of the harvest is processed using the washed method, while the other part is processed naturally. Natural processing involves drying whole cherries, which allows the beans to absorb the sweetness and flavor of the cherry pulp. This process gives the coffee a fuller body and distinctive fruity notes. The washed method involves removing the skin from the cherries and fermenting them in water tanks, resulting in a coffee with a cleaner flavor. This process leaves the coffee with higher acidity, subtle fruity and floral notes, and an overall balanced profile, ideal for lovers of bright and precise flavors.
