Washed Ethiopia Beshasha from BirdSong Coffee in the Jimma region is like the first warm day after a long winter - fresh, vibrant and full of life. Each sip of this coffee combines the smoothness of green tea with the sparkly acidity of yuzu and the honeyed sweetness of mirabelles, leaving a long, harmonious aftertaste in the mouth. The West Ethiopian region of Jimma is the very heart of coffee - it is here that wild arabica was born and it is here that Mustefa Abakena continues today the tradition of growing with a deep respect for nature. His farm lies at an altitude of 2040 metres, where the cooler climate and rich volcanic soil slow the ripening of the coffee cherries and lend the resulting beans a complex flavour profile. Mustefa is part of a new generation of producers - not only does he grow his own coffee, but he also works extensively with nearby smallholders from whom he buys carefully selected cherries. Together they are building a community focused on quality, sustainability and fair conditions. Mustefa invests in education, modern technology and ecological practices, contributing to the preservation of Ethiopia's coffee heritage and improving the livelihoods of farmers in the region.

This lot is the result of precise washed processing that highlights the natural purity and delicacy of Ethiopian coffees. After harvesting, the ripe cherries are de-skinned and fermented in water, separating the pulp without loss of flavour. The beans are then thoroughly washed and dried on raised 'African' beds for several days, giving them a stable and clean profile. The result is a coffee that blossoms beautifully in the filter - with a tea-like elegance and citrus freshness that lingers long after finishing.
