This coffee didn't travel to Europe by traditional cargo ship, but in style—by sailboat! This eco-friendly mode of transport combines tradition with a modern approach and is used only for exceptional coffees. The espresso made from it is beautifully balanced and full of flavor. You will find a hint of tangy mandarin, the sweetness of plum jam, and the pleasant bitterness of Dutch cocoa. Thanks to the natural processing, its sweetness and fullness stand out even more.
Mauricio Salaverria's farm is located on the famous Route of Flowers, in an area called High Springs. This place boasts an exceptional clay-limestone terroir and more than a century of coffee growing tradition. Mauricio has built an eco-friendly processing station here and developed an innovative drying process that brings out the tropical tones in the coffee.
While the dry (natural) method usually takes 10-15 days, Mauricio lets the coffee cherries rest and dry in the shade for almost 30 days on special raised beds. This time-consuming process allows the sweetness, balance, and exotic flavor to fully develop. And that's how this coffee is made – the Natural Pineapple process . It is a pure, sweet, and pleasant natural coffee that got its name after Q-graders and guests repeatedly mentioned notes of pineapple (piña) during cuppings.
