Dos Mundos Roastery is introducing a new espresso blend called “Two Worlds.” In the cup, smooth milk chocolate and chocolate pralines blend with the distinct sweetness of grilled pineapple and the mild tartness of mirabelle plums. The blend is suitable for both espresso and as a base for milk-based drinks. It’s entirely up to you how you enjoy your coffee.
The blend features two coffees; the first comes from the Nyungwe region in Rwanda, specifically from the Bisoke processing station. Since 2019, the station has been part of the Rwanda Trading Company project, which focuses on showcasing the potential of Rwandan coffee. The variety found here is Red Bourbon, processed using the natural method. The second component is a field blend from the Antioquia region of Colombia, sourced from the Betania and Siruma stations and made up of cherries from local smallholder farmers. The coffee was processed under the auspices of the Wayuu project, which focuses on supporting smallholder farmers and increasing transparency in the coffee industry.
The coffee beans from Rwanda were processed using the natural method. The cherries were first hand-picked and sorted to remove any unripe or damaged ones. They were then spread out on so-called African beds, where they were dried while being turned regularly until they reached optimal moisture content. After drying, the pulp was removed, and the beans were sorted one last time to ensure the highest possible quality. Colombian coffee, on the other hand, was processed using the washed method, in which, after careful harvesting and sorting, the beans are de-pulped and soaked in tanks of water for several hours. Here, the remaining pulp ferments and is removed by washing the beans before they are moved to the drying stage. The beans are left to dry while being turned regularly until they reach optimal moisture content. Together, these two coffees form a unique and harmonious blend that will be enjoyed by lovers of both espresso and milk-based drinks.
