Behind this coffee is the Calderón family , who run the Los Ángeles micromill in the Dota area of Tarrazú, one of Costa Rica's most famous coffee regions. Ricardo Calderón and his family have been producing premium coffees of the highest quality here for many years and are constantly pushing the boundaries of processing and cultivation. The Mejorado variety , a natural hybrid of Bourbon and Ethiopian varieties, has proven to be exceptionally suitable for their farm and stands out for its juiciness and unmistakable aroma. The coffee trees grow in a mountainous environment with ideal altitude and a varied microclimate, which promotes slow ripening of the cherries and thus a richer flavor. In addition, the Calderóns pay close attention to soil health and precise selective harvesting, which is reflected in an exceptionally clean and intense cup.
The processing is done using the rested honey method , which the Calderón family has mastered down to the smallest detail. The carefully harvested cherries are first de-husked, but part of the pulp remains on the bean and caramelizes during drying, adding a distinctive sweetness to the final profile. A specific feature of this variant is the "rested" phase – after partial drying, the coffee is left to rest and only then is it dried to its final form. This process allows for better stabilization of flavors and deepening of the fruity character, resulting in more pronounced strawberry and floral tones. The honey method perfectly highlights the inherent juiciness of the Mejorado variety and gives the coffee elegance and complex layers, making it one of the truly unforgettable filter coffees.
