The coffee comes from Colombia and has been processed using the semi-washed method to bring out its delicate and sweet flavor profile. With every sip, the flavors of chocolate cream, fluffy doughnuts, delicate cardamom cream, and cherry jelly unfold, creating a sweet dessert right in your cup and reminding you why autumn is the most magical time of the year.

Los Nogales, a farm with a rich history, is where Ricardo Hernández and Concepción Castillo began building their coffee vision 80 years ago. Their son, Ricaurte Hernández, led the family business with dedication and passion, leaving an indelible mark on the history of Colombian coffee. In 2005, after years of hard work and innovation, Los Nogales won first place in Colombia's historic Cup of Excellence competition. After Ricaurte's tragic death in 2013, his son Oscar Fernando Hernández decided to take over the reins and continue the family tradition. Thanks to his professional training in environmental management and his ongoing commitment to sustainable and innovative practices, Oscar has taken the farm to a new level, combining tradition with modern technology.

This coffee is processed using the semi-washed method according to a precisely developed protocol that combines traditional practices with a modern emphasis on quality and sustainability. Hand-picked fully ripe cherries first undergo 72-84 hours of oxidation in open tanks, followed by careful pulping and36 hours of anaerobic fermentation in plastic tanks. Subsequent gentle washing removes part of the skin and prepares the beans for 15-20 days of sun drying, during which they are turned regularly three times a day to ensure an even result. This process emphasizes the philosophy of CATA and the Los Nogales farm, based on clean agriculture, precise fermentation, and the use of organic fertilizers, which is reflected not only in the exceptional quality of the cup but also in its environmental friendliness.

When prepared well, an interesting flavor combination of doughnuts and jam.
Apparently, the omni roast made the coffee difficult to prepare. I never managed to find a good flavor on the V60 (either too sour or too bitter). On the French Press, about a third of the time. The best option for an acceptable flavor for me was the Moka pot.

Sweeter coffee
For me, it's just average coffee without any imagination.
I tried different grind sizes and water temperatures on the filter, different bloom times, but I know better coffees (for this price and lower).

Hello, 1. Brewing from a capsule – what does point 7 in the instructions mean: For hot water... start extraction immediately? 2. Brewing from ground coffee – point 9 in the instructions... and stop extraction immediately? I know what extraction means, but how do I do it?
It says - for hot water, press twice. That's what I use. ...or press and hold the button for 5 seconds and stop - start extraction immediately. I even took a photo of it in the instructions, but there is no space for pictures here. Too bad.
