Diamond's Roastery presents a coffee that captivates from the very first sip. Colombia QUEBRADITAS has a delicate profile, yet is distinctive and emotionally memorable—the kind of coffee you find yourself thinking about long after you've finished your cup. The taste is reminiscent of oolong with a drop of cream, sweet peach iced tea, and delicate floral notes of jasmine and elderflower. All this creates an unexpectedly complex yet light and smooth experience that unfolds beautifully with every sip. This coffee is one of those that is worth slowing down and really savoring – as roaster Tomáš himself says, it immediately stood out among the other samples.

Behind this taste experience is the Quebraditas project, which originated in the Huila region near the village of Oporapa. Its founders, Edinson Argote and Ángela Rojas, decided to change the way local growers work with specialty coffee. Under their leadership, the Chorro Alto and Quebraditas farms have become centers of innovation, transparent cooperation, and fair treatment of farmers. They share seeds of rare varieties, support the growth of local producers, and ship each lot under the name of the specific grower. The Chiroso variety, grown at an altitude of 1,850 meters above sea level, finds ideal conditions here—slow ripening, a cooler climate, and rich soil give it its characteristic tea-like flavor, elegance, and floral complexity.

The key to the final profile is a carefully designed fermentation process. Processing begins with the selection of perfectly ripe cherries and their sorting in water. This is followed by 12 hours of oxidation, dry hulling, and 48 hours of aerobic fermentation. The entire process is completed with a heat shock – washing with water at a temperature of 45°C, which enhances the purity and delicate aromatic tones. The coffee is then mechanically dried for 76 hours under controlled conditions and stabilized in GrainPro bags. The result is a cup that combines the tea-like structure of oolong, peach sweetness, creamy smoothness, and jasmine floral nuances into an exceptionally sophisticated and modern flavor profile.
