The coffee comes from the Patio Bonito farm in the Pescador area of Colombia’s Cauca region, where Paola Trujillo, together with her family, is building one of the most interesting family projects far and wide. The farm is located at an elevation of 1,570–1,650 meters above sea level, and in addition to traditional varieties, they also grow rare exotic varieties such as Geisha, Pink Bourbon, and Wush Wush. Paola studied chemical engineering and today uses her knowledge to improve the quality and processing of the coffee. The entire family is involved in every step of production, and their attention to detail, education, and sharing of experiences is reflected in every cup of this specialty coffee.
After hand-picking the ripest cherries , they are carefully sorted and washed, with an emphasis on purity and complexity of flavor. The coffee undergoes a 32-hour anaerobic fermentation following the Cofinet protocol, during which its sweetness, fruitiness, and distinctive aromas gradually develop. This is followed by further fermentation after hulling and subsequent slow drying on raised beds under the careful supervision of the farm team. The Wush Wush variety is known for its exotic aromas, floral character, and complex flavor profile, which, combined with precise processing, creates a truly unforgettable cup.
