Colombia La Victoria from London roaster Square Mile is a coffee that does not make a grand impression, but instead wins you over with its elegance, purity, and precise structure. A light filter brings out the delicate floral tones typical of washed Geisha, while the juicy acidity is reminiscent of citrus peel and ripe stone fruit. It's the kind of coffee that makes you slow down and pay attention to every sip. The light roast brings out the details and gives space to the subtle nuances that gradually unfold in the cup.
Behind this lot is Aristobulo Rayo Mendez from the La Victoria farm in the Ortega region of Tolima. He originally planted Geisha without knowing its reputation, until the first harvests showed lower yields but exceptional quality in the cup. Thanks to cooperation with the Café Agrario association and the exporter Siruma, its potential was recognized and further developed. Together, they adjusted the processes so that this variety could fully express its character. The result is a lot that has stood up to repeated blind tastings and has rightly attracted the attention of roasters.
The coffee is processed using the washed method, which emphasizes its purity and highlights its floral profile. After selective harvesting, the cherries are hulled, fermented in water, and then washed to bring out the transparency of flavor and precise acidity. It is this combination of Tolima's high-altitude terroir, the producer's careful work, and the sensitive washed process that creates a cup that is light, bright, and yet deep.
