This coffee comes from the Huila coffee region in western Colombia. It is the result of the work of the La Parada farm , founded 15 years ago by Alberto Martinez, representing the first generation of coffee producers in his family. Together with his wife and sons, he cultivates five hectares of land at an altitude of 2,000 meters above sea level, where they grow varieties such as Colombia, Pink Bourbon, Pacamara, and Geisha. This limited edition was created in collaboration with Cuatro Vientos, a family company specializing in micro-lots and premium coffees from Huila.
The coffee gets its pleasant alcoholic touch and sweet fruitiness from natural anaerobic processing. This involves placing the ripe coffee cherries whole in closed containers, where they ferment without access to oxygen. The fermentation itself lasts 24 to 96 hours, during which the temperature and pressure are monitored. The cherries are then dried in the sun for several weeks and finally the husks are mechanically removed. Coffee processed in this way has a distinctive rum and spicy flavor with notes of tropical fruit. And that is exactly what Colombia LA PARADA is like.
