Bolivia Kantutani from the Hungarian roastery Casino Mocca has a flavor reminiscent of crunchy nutty brittle, juicy orange, and cocoa beans. The sweeter nutty base gives the cup a rounded body, while the orange acidity pleasantly lightens it, and the cocoa provides a slightly chocolatey finish. The result is a balanced espresso that will delight anyone looking for pronounced sweetness without sacrificing fruity freshness.
The coffee comes from the Caranavi area in Bolivia’s Los Yungas region, one of the most interesting sources of specialty coffee in the area. Behind this lot is Grover Mamani and his 13-hectare farm, Finca Kantutani, where the Catuai variety grows at an elevation of around 1,500 meters. The farm uses an agroforestry management method, in which coffee trees are grown alongside trees and other plants. This creates a more diverse environment that supports the health of both the soil and the coffee trees themselves. Although the farm is not certified organic, it does not use chemical pesticides during cultivation.
After harvest, the beans undergo washed processing supplemented by spontaneous fermentation. No specially selected cultures are added during this process; instead, fermentation is naturally initiated by microorganisms present on the coffee and in the surrounding environment. Subsequent washing removes any remaining pulp from the beans and helps highlight the clarity and distinctiveness of the resulting cup. It is precisely this combination that brings out the sweet, nutty character, fresh orange notes, and the subtly bitter tones of cocoa beans, making Kantutani a balanced and approachable espresso with a pleasant hint of fruitiness.
