"It's like lemon cake meets afternoon tea. Delicate, fragrant, with a hint of summer." That's how Czech roaster Illegal Beans describes their Uganda KUOSHA CRISP. This African beauty for espresso perfectly combines the floral notes of green tea with the delicate acidity of lemon zest. The earthiness typical of Uganda can be found in these beans in the form of hazelnuts. And finally, you can enjoy a subtle hint of gingerbread spice. Just like lemon cake and tea.
The coffee comes from the mountainous Rwenzori region , located in western Uganda near the border with the Democratic Republic of Congo. Known as the "Mountain of the Moon," this area provides ideal conditions for growing high-quality Arabica thanks to its rich volcanic soil and high altitude. The coffee cherries are tended by approximately 300 small farmers who focus on growing the traditional Kenyan varieties SL14 and SL28, prized for their complex flavor and ability to respond well to careful processing.
The coffee owes its lightness and fresh fruit profile to the washed processing method. After being harvested by hand, the coffee cherries are taken to the Agri Evolve processing station, where they are carefully sorted and undergo dry fermentation for 48 hours. The beans are then soaked in water tanks and evenly dried in the sun, which ensures consistency in the flavor profile between individual lots. The result is a clean and fresh cup with a distinctive acidity and a clear, fruity and delicious flavor that is typical of this region and the SL14 and SL28 varieties.
