Thailand Wichai from Factory Coffee is a filter coffee that emphasizes sweetness and a subtly exotic fruity character. The coffee has a smooth, rounded body and a long, fruity-sweet aftertaste that gently tempts you to take another sip. The beans come from Thailand, specifically from the Nan, Maneepruek region. The coffee is produced by Wichai Saenchai. Wichai grew this coffee on his De Hmong farm, where he has long been dedicated to growing specialty coffee. Typica coffee trees grow here at an altitude of 1,450–1,500 meters above sea level, which contributes to the development of sweetness and complexity in the cup. It is precisely the combination of this variety and the local conditions that gives rise to a cup that is elegant, clear, and at the same time distinctive enough to captivate even the most experienced specialty coffee drinkers.
Processing is done using the natural method, i.e., the dry method. The coffee cherries are dried whole, with both the skin and pulp, which allows the sugars and fruity components to gradually be absorbed into the bean. This process naturally enhances the coffee’s sweetness, body, and fruity character, which in this case manifests as notes of raisins, peaches, and citrus pomelo. As a result, the coffee has a more pronounced aroma and fuller flavor profile than washed coffees. The result is a cup that is sweet, rounded, and beautifully fruity, ideal for pour-over brewing methods.
