Cocatu is the product of a producer group founded in 2007 by twenty local farmers. Today, the group has 260 members and works with the Kinini Coffee processing station in the town of Tumba. This collaboration, which began in 2017 as a result of the global financial crisis, allows farmers to benefit from the efficient processing and renowned quality control that Kinini offers. In addition, farmers gain access to training and financial advice, which supports their ability to save from their earnings. Some farmers use these savings to provide loans to other farmers and earn interest, a system they call "Cocatu Microfinance." This collaboration is the foundation of Cocatu coffee production, which is a great example of cooperation, quality, and innovation.
Cocatu coffee is processed using the washed method. This traditional processing method involves carefully removing the pulp from the coffee cherries and then fermenting the beans in clean water. This removes all impurities from the coffee and results in a cleaner flavor profile. The resulting coffee is then dried on raised beds, which ensures even and slow drying, helping to preserve the full aroma and complexity of flavors. The raised bed drying process allows the coffee to breathe freely while protecting the beans from direct contact with the ground, minimizing the risk of contamination and ensuring a higher standard of quality. Throughout the drying process, the coffee is regularly turned and checked to ensure that each bean reaches the ideal moisture level for optimal flavor. This care and precision in the processing reflects in Cocatu coffee's unique flavor profile. The flavors are clearly defined and balanced, with hints of sweet fruit tones and a subtle acidity that adds freshness and liveliness to the coffee. The washed method thus contributes to the creation of a coffee that is not only delicious but also clean and smooth, with each cup delivering an unforgettable coffee experience.
