Behind this beautiful coffee is Merci Fernandez, a farmer from the Colasay region of Peru, where her farm La Pomarrosa is located at an altitude of 1,700–1,800 meters above sea level. Merci is part of a new generation of producers who see coffee growing as a journey – not only economic, but also human and environmental. La Pomarrosa is not a large-scale production facility, but a carefully managed place where every bush receives the attention and care it deserves. Merci's work is reflected in every sip: her approach combines respect for nature with a deep understanding of the flavor potential of each bean.
The coffee was processed using the washed method – after harvesting, the cherries are de-pulped, fermented, and then washed with clean mountain water. This allows the resulting profile to retain its delicacy and clarity, in which all the notes of red fruit and honey sweetness are easily recognizable. The Bourbon beans retain their natural fruitiness and elegance in this process, while responding beautifully to the high-altitude conditions of Colasay. La Pomarrosa is proof that honest work, good conditions, and the human touch create coffee with heart.
