This time, Jičínská Pražírna Krok offers us coffee originating from the Menyamya region in the province of Morobe in eastern Papua New Guinea. Its flavor profile includes dried stone fruits, high-quality milk chocolate, spices, and a delicate floral finish. A cup of this filter-roasted coffee is sure to delight any coffee lover who seeks a harmonious combination of sweet, spicy, and floral tones.
The province of Morobe is a mountainous and relatively remote area at an altitude of between 1,200 and 1,700 meters above sea level. Coffee trees grow here in small family gardens surrounded by lush jungle, with each family caring for only a few hundred bushes. This gives the beans from Papua New Guinea their unique character and diversity. Small growers also benefit from the immediate proximity of the rainforest, which makes the local soil very rich and organic. Add to this a climate with frequent fog and regular rainfall, and you have the ideal conditions for the slow ripening of coffee cherries, which develops their complexity and density.
Only ripe red cherries are picked for coffee, which farmers first peel in small village stations (wet mills) and then ferment and wash carefully. The coffee is therefore processed using the washed method. This is followed by drying on tarpaulins or African beds, and once the parchment is dry, the coffee is transported to the city of Lae, where it is further sorted and prepared for export.
