The Finca Aurora farm has belonged to the Ferrufino family since 2004 and is located in the Matagalpa region of Nicaragua at an altitude of around 1,200–1,400 meters above sea level. Thanks to their long-term work in the coffee industry for over thirty years, the family has gained a reputation not only for the quality of the beans they grow, but also for their integrated operation, where they not only own coffee trees, but also dry, process, and package the beans themselves on the farm. Over the years, the Ferrufino family has invested in ensuring fair wages, safe living conditions, healthcare, food, and education for its workers. In addition, they also work with smaller producers in the area, helping them to improve their cultivation practices.
This lot is based on the Parainema variety, which is prized for its disease resistance and ability to produce juicy, fruity profiles. Processing is done using the anaerobic natural method, which means that the cherries underwent fermentation without oxygen and were then dried as whole fruits. This process promotes intense fruitiness, depth, and complexity—characteristics that you will experience in the cup in the form of tropical fruit richness combined with a subtle alcoholic note.
