The profile is built on notes of caramel and honey, gradually joined by ripered apple and juicyorange, and rounded out by cocoa and dried fruit. Behind this coffee are two farms, Los Altiplanosand San Ramón, in the Jinotega region of northern Nicaragua, where coffee cultivation has a long tradition. Producers Ricardo Cuadra Fajardo and Juan Rizo work here with respect for the local landscape and the coffee itself, which is reflected in every cup. An altitude exceeding 1,100 meters slows the ripening of the coffee cherries, giving the beans more time to develop their natural sweetness and flavor profile.
The Parainema variety adds a delicate, refined acidity and a light complexity to the cup—one that isn’t intrusive but rather subtly complements the overall profile and holds it together nicely. The washed processing method also plays an important role, allowing the coffee’s natural character to shine through without any unnecessary “noise.” In washed processing, the coffee cherries are de-pulped immediately after harvest, then fermented in water, and subsequently carefully dried. In the cup, this manifests as a balanced, clean profile where each component has its place and nothing overpowers the rest. Simply put, an excellent espresso that delights and warms.
