Mexico Rony Ordoñez Honey from Two Words Coffee roasters welcomes you with a distinctive aroma of citrus, especially lime and lemon, complemented by a tropical hint of mango and a delicate floral component. The coffee has a lively acidity that gives it freshness, while the natural sweetness and medium body in the background create harmony between the fruity tones and the gradual aftertaste. When roasted properly, a delicate pearlescent structure opens up, emphasizing its complexity and appeal to lovers of premium filtered coffee.
This coffee comes from southern Mexico, from the work of the Rony Ordoñez family of growers. Rony has been involved in coffee for about 25 years and ten years ago, with the help of his father, brother, and hired workers, he established his own plantations. He has two fields at an altitude of approximately 1,478 meters above sea level. On his farm, he grows varieties such as Typica, Mundo Novo, Bourbon (as well as other local varieties such as Catuai, Villa Sarchi, Catimor, San Ramon, and Garnica Chaparro). Most of the harvest is done by workers, while Rony and his brother take care of processing. He uses the income from coffee to support his family and reinvest in the farm, while keeping part of the harvest (about 255 lbs) for his own household needs. In addition to coffee, the farm also grows bananas, citrus fruits, chayote, and other crops for self-sufficiency.
The processing method used is known as the honey process. The coffee cherries are peeled so that the beans retain some of the mucilage, which remains on the bean during drying instead of being completely removed. This approach combines some of the attributes of the washed and natural processes—it preserves some of the character of the fruit while also striving for purity.
