This coffee comes from the mountainous region of Chiapas in southern Mexico, known for its fertile volcanic soil and ideal conditions for growing coffee. The producer of this coffee is a pioneering exporter, founded in 1980, with decades of commitment to quality and sustainability. This company was the first decaffeination station in Latin America and has been built on solid ethical principles from the outset, with a responsibility that extends not only to its customers and employees, but also to farmers, local communities, and the environment.

Mexico CHABELA DECAF is decaffeinated using a patented water method developed in 1987 that removes more than 99% of the caffeine without the use of chemicals. The beans are first soaked in water to release the caffeine along with other soluble substances. The water is then filtered through a carbon filter, which captures only the caffeine molecules, while the flavor components remain in the water solution. This is then reused to decaffeinate other beans. The result is a coffee that retains its aroma, flavor, and quality.
