The coffee comes from small-scale farmers in the Gedeo region of Gedeb, in southern Ethiopia, part of the Yirgacheffe region. Growing conditions here are exceptional thanks tothe high altitude of 2,000 to 2, 100 meters and fertile volcanic soils that are highly capable of retaining nutrients. These conditions give rise to coffees with a distinctive character. The JARC 74 variety is a specific selection within the broader category of “Heirloom,” a term referring to coffee varieties endemic to Ethiopia that naturally form a genetic mix of various unknown varieties.
The quality of this coffee is the result of natural processing. The process begins with the selection of the ripest cherries, which are immediately placed on raised nets to dry. During drying—while still in the cherry—the coffee acquires a unique sweetness and complexity typical of Ethiopian natural coffees. The entire process is strictly monitored to ensure the cherries reach a moisture content of 12%, which guarantees flavor stability and preserves all the subtle nuances so characteristic of this premium selection.
