This coffee comes from the hands of farmer Daisy Acevedo and has a fascinating story behind it. Daisy, the daughter of Gustavo Acevedo from the La Celia area of Risaralda, returned with her husband Freddy from Panama, where they discovered the Geisha variety that caused a stir in the coffee world. After an unsuccessful attempt to obtain seeds under local conditions, they managed to bring back several seeds on their next trip, which they planted on Gustavo's farm. The bushes were left to grow for three years before producing their first harvest. Gustavo, skeptical about his daughter's stories about the value of Geisha, discreetly sold the coffee to a local cooperative to find out its true price. After the authenticity of the variety was confirmed by LaREB, Daisy and Freddy are now working diligently on harvesting and processing to ensure the high quality and consistency of their crop.
This Geisha was processed using the fully washed method, which in this case began with carefully selected cherries passing through a huller that removes the skin and pulp, leaving only green beans with small remnants of pulp, which then rest for 24 hours (in-husk resting) to prepare evenly for the next stage. After this rest, 48 hours of open fermentation takes place, during which the remaining pulp is completely separated and the beans acquire a clean structure. Finally, the beans are dried in a greenhouse for 15 days (greenhouse drying), which allows for even drying at a controlled temperature and humidity. Thanks to this careful process, the coffee retains a delicate fruity component, a distinctive but pleasantly balanced acidity, and a clean taste that highlights the characteristic delicacy of the Geisha variety.
